Breakfast, 8:30 a.m.
This morning, I had scrambled eggs made with two organic eggs, a splash of milk and the tiniest amount of butter. That green thing is jalapeno hot sauce! #tasty
I aslo had a slice of bread, and some halloumi cheese! I mean, I live in Cyprus! Halloumi cheese is a star here!
On the side I have my americano with a splash of semi-skimmed milk! I know, I used to use a teaspoon of sugar, but I decided to cut back on the sugar, all together!
What else? hmmm… oh yeah! The fruit… it just one plum sliced.
Lunch, 1:00 p.m.
Lunch time, and I am hungryy!! For my protein today, I had some leftover pan-roasted chicken. My mum made it… but I think she used olive oil, salt and pepper – very simple… I squeezed some lemon on my chicken, as well! On the side, I had wilted cabbage cooked with olive oil, carrots, onion, garlic, tomato and red bell pepper or paprika!
To finish it up, I had some Cypriot green olives called “tsakistes”, which literally means crushed, as the name alludes to the preparation process! The olives are seasoned with dried coriander seeds, garlic and lemon juice. They are delish! If halloumi is the star in Cypriot cuisine, olives are the queens! These green olives will also co-star in my dishes these days because I am in “tsakistes” kick! :p
Right after my lunch I needed something sweet, so I had some orange juice! I knooow… it is not good for you! But this one contains stevia, no sugaaaar!
Come on, is not too bad… right?!
Snack, 5:30 p.m.
It does not need an explanation, pretty basic snack… sliced orangeee…
It was not very sweet though! FYI :p
Dinner, 7:00 p.m.
For dinner I had some chicken pilaf made with chopped onion, rice, chicken and some oilve oil.
I seasoned it with salt, pepper and turmeric, hence the yellowish colour!
I feel like today was not very healthy day! But it was not unhealthy, either. What do you think?
