What I eat in a day #7

I haven’t done one of this in a really long time! Disclaimeeer… this is not how i eat everyday, of course! You caught me on a bad day! I could have not uploaded it, but i figured that it is good to see that no one is perfect and that there are days when you, simply, do not eat healthy balanced meals.

Breakfast 7:30 a.m. 

I eyeball everything, so I cannot give you precise measurement, but i will try to be as accurate as possible. So, I had a bowl of cereal made with 1/2 a cup of granola, 1/2 a cup of milk and a medium sliced banana. That brekkie was pretty balanced!

The granola was Lizi’s Belgian Chocolate granola (it is a UK brand, if i am not mistaken) and the milk was 1,5%.

On the side, I had my coffee with a splash of milk! Now that it is summer I make my coffee in advance! I add a tablespoon of coffee (for each cup) in my french press, hot water and I let it steep for 4 minutes, then I press it! I let it cool down and then I put it in the fridge, so I end up with iced latte. ***Sometimes i add cinnamon in my coffee before I brew it! It is delicious too!

Snack, 10:00 a.m.

I had chocolate milk (250ml)! Don’t ask!  

 

 

 

 

 

Lunch 2:00 p.m.

I had leftover spinach and kale mac and cheese with feta and cheddar.

It was a small piece… but still!

 

 

Snack/Dessert 5:00 p.m.

 I went out to meet a friend at a coffee shop. We ended up at this amazing cafe which serves Greek desserts and coffee! I had “bougatsa”, a buttery pastry filled with custard or pastry cream, however you call it! So good!

On the side, I had Greek “frappe” coffee, with a splash of milk, no sugar! For those of you who do not know, Frappe is the Greek version of iced coffee.

Late night snack, 10: 00 p.m.

Honestly, after all these sugary stuff, I was not hungry for hours, so I skipped dinner!

I only had a snack really late, because this was when I was hungry! I did not want to eat dinner that late so I decided to have a toast with a slice of toasted whole wheat bread, lightly buttered, with one of this laughing cow cheese singles. On the side I had a cold lemonade!

I am pretty sure that lemonade does not go with toast but I had it anyway!

That’s it!

Pretty bad day, I know, and I do not even feel guilty! hahaha… These days happen and they will keep happening… That’s life!

Holland Baby, HOLLAND | Travelling

Man, I have been to Holland OR the Netherlands – however you call it – in December of 2015! WOW, that was an experience! It was so beautiful and busy! A very vibrant country, indeed!

I visited Kinderdijk where I learned more about the dikes and how they manage to control the water level so that the country does not become one big messy flooded place. ***Side note… normally, one third of the country is under the sea level, the dikes control the water level and keep the water away! Here you go! Dat educational part, tho!

That’s why it is said that Dutch created their own country! Accuraaate!!

My favorite cities were Amsterdam and Utrecht! Amsterdam is very touristic and busy, while Utrecht is more like a student city – still very busy – but not so touristic! I mean, I could meet locals, there! Dah…

The thing that impressed me the most was the bicycles! Seriously, these people use bicycles to go everywhere! They have special parking places and roads for their vehicles! ….

Okay, you might say, what’s so impressive about that? WEEEELL, they were EVERYWHERE! Piles of bicycles! Also, coming from Cyprus, where we only use cars… that was a cultural shock for me!

Come on girl, talk about the coffee shopz?! ….with an effing “z”!!

I know, I know… everyone asked about them! How are they? Did you smoke weed? Jeeeeez… There were plenty of these everywhere, but, NO, I did not go in and I did not eat the cakez! Sorry! … Oh, and there were also marijuana and hemp museums around the city center… whiich… was actually funny!

Overall, it was a great Christmas trip! I got to visit the Rijks Museum, meet with the locals, bike everywhere, take pictures at the canals of Amsterdam, get to experience the Dutch culture, eat traditional food and travel more… PERFECTION!

Peach Crisp | Recipe Box

Last week, on the 21st of June, we welcomed the best season of the year! SUMMEEEER! But, I forgot it… so the days went by and two days ago I remembered! Daaahh….. Summer has become my favourite season, so I decided to welcome it properly, no matter what! I mean, I had to bake something, so I decided to make a peach crisp! Peaches are summer fruit, right?!

Oh man, I adore summer! SUN, SEA, HOLIDAYS… you cannot go wrong!  ❤

Ingredients:

8 medium peaches, cut in wedges

1/3 cup sugar

1 Tbsp corn flour

Crisp topping:

3/4 cup AP flour

1/2 cup oats

1/4 cup ground almonds

1/4 cup brown sugar

1/2 cup cold butter, cubed

1/4 tsp cinnamon

1/4 tsp pink salt

 

Instructions:

1) Preheat the oven to 190 degrees Celsius.

2) Peel the peaches and cut them in wedges. In a large bowl mix together the peaches with the sugar and the corn flour. Add the peach mixture in a baking dish and set aside.

3) In a the food processor, fitted with the blade attachment, add the topping ingredients and pulse until the crumble is formed. ** You have to work quickly because you do not want the butter to melt.

4) Sprinkle the topping over the peaches and bake for 35 minutes or until golden brown.

5) Serve with a scoop of vanilla ice cream. Enjoy!

What I Eat in a Day #6

Breakfast, 8:30 a.m.

I had one multi grain roll cut in half. I got it from Lidl. The sunflower and poppy seeds of the bread is a great combo, with the avo mash.

I mashed 1/2 an avocado, I spread it on the bread and sprinkled salt and pepper over it. On the side I had a sunny side up egg. This is how American call it, right? I fried it in a non-stick pan, so i literally added the tiniest amount of olive oil. And of course, my American coffee with a splash of milk.

Lunch, 12:00 p.m.

lunchI had a Greek dish, called “giouvetsi”. It is orzo pasta and pork cooked with tomato, onion, garlic, olive oil, salt and pepper. I would say that it has got the texture of risotto!

I also had a tablespoon of sheep’s yogurt, on the side. I like its sourness!

 

Snack, 18:00 p.m.

Snack for today was a small nana!!

 

 

 

 

 

Dinner, 20:30 p.m.

dinnerLastly, for dinner today I had a Greek soup called “augolemono”. Augolemono is a lemon – broth soup with meatballs. The meatballs contain spices and rice. We form them and throw them in the broth to cook. Once the rice is cooked, we make an egg-lemon mixture and pour it over the soup to thicken it up.

Grocery Haul | Food Diary

I got these groceries a few days ago… khm khm… correction…a lot of days ago but I still think is a good idea to share! Anyways, this is what I get on a regular basis, so let’s pretend that I bought everything yesterday! :p

Pantry Stables:

  • Semi – skimmed milk (2L), YES, we like milk in this household.
  • Margarine (250g) … it is a Greek Company that’s why you do not know it!!
  • Goat’s Yogurt (400g), I like that one better because it is kinda sour!

Medjool dates…which are very expesive, by the way!

I got like 200g and I paid like 3 euro! Crazy!

 

Fresh Produce:

  • 4 tomatoes
  • 3 peppers
  • 4 avocados
  • 3 onions
  • A package of baby spinach
  • 1 kg of potatoes
  • 1 kg of bananas, they are local bananas that’s why they are small.

Bathroom Stables:

  • Shampoo, head and shoulders cause my hair is falling apart
  • Body shower gel, it is by “Le petit Marsalles” and is the pistachio & chestnut kind! I do not know how they are doing, but this smells like heaven… wow

That’s about it! The total cost was 44 euro! Not bad, at all!

Whole Roast Bream with Lemon | Recipe Box

Here in Cyprus fresh fish can be found everywhere. I purchased these two breams from the market and I asked the guys there to clean it for me! I am gonna be honest here… cleaning fish is not something I have ever done, nor I ever intend to do! :p

This recipe is my favouriteee because it makes for the best lemony fish.

Ingredients:

2 sea breams

1 lemon, peeled and cut into slices

2 Tbsp olive oil

1 tsp soumac

1 tsp oregano

salt and pepper, to taste

Instructions:

1. Prepare, aluminium foil and parchment paper “beds” for the fish and place the fish on it. *** Wear gloves when touching the fish

2. Season the fish with salt and pepper. ** Do not forget to season the cavity of the fish, as well.

3. In the belly cavity, lay half of the lemon slices, season with 1/4 tsp soumac and  1/4 tsp oregano. Sprinkle the other 1/4 tsp soumac and 1/4 tsp oregano  on top of the fish.

4. Before wrapping the fish, drizzle with a 1 tablespoon olive oil.16652031_10212344815565610_1613378618_n

5. Repeat the process with the second fish.

6. Wrap the fish by pinching the edges of the foil.

7. Bake at 185 °for about 40 and then open the foil and let the fish brown for about 10 min.

You can serve the fish with rice or baked potatoes.

Serves 3-4

Indian Garam Masala Chicken | Recipe Box

16522275_10212296390875023_812837452_oI am not saying that is an original Indian chicken recipe, but this is what I make, when I crave something Indian! I find it very easy and very quick, and it always comes out delicious.

Side note! I add red bell peppers in my “curry”, as well, but, this time, I did not have any on hand… so I did not add any! Buuut I will include it in the recipe below!

Ingredients:

450g (1lb) chicken thighs, bone – in

3 Tbsp ghee (butter) or olive oil  #Mediterranean :p

 1 bell pepper, cut into strips

1 Tbsp garam masala

1 tsp turmeric

1 tsp granulated garlic or 4 garlic cloves, minced

1/2 tsp chili flakes

3/4 cup light coconut milk

salt and pepper, to taste

Instructions:

1. In a pan over high heat, bring 2 Tbsp of oil to temperature and seal the chicken on both sides, until it develops golden brown colour.

2. Remove the chicken from the pan. Add the other tablespoon of oil and cook the pepper for a couple of minutes.

3. Now you have to work quickly because you do not want to burn your spices. Sooo, stir in all the spices, the garlic and add 1 cup of water.

4. Place the chicken into the spice broth, lower the temperature to medium  (4-5) and let the chicken cook for 15 minutes. Check every 3 minutes and turn the chicken on the other side to make sure it cooks evenly. Add more water if needed.

5. At this point the water should be evaporated. Pour in the coconut milk and let it cook for about 5 minutes or until it is thick enough.

6. Serve over rice or any other grain you like. I served it with millet this time, and I must say that it was very tasty.

Serves 3 people

Healthy Granola | Recipe Box

16443880_10212275296707682_629194894_o Granola is usually filled with added sugar and fat which make it nothing but healthy!

New Years Resolution and ish.. so I am on a healthy kick these days, so I decided to transform this sugary goodness to its healthy version.

Ingredients:

1/2 cup (40g) rolled oats

1/2 of a spotty banana (spotty bananas are very sweet, so you do not need any extra sweetness)

1/2 tsp pure cocoa powder

1 tsp flax seed or chia seeds

Optional: You can also add nuts like almonds, cashews, hazelnut etc or cinnamon

To serve:

1/2 banana, chopped or 1/2 cup of berries or any other fruit you like

Instructions: 

  1. Place all the granola ingredients in the food processor and blend until the granola starts to form.        16443898_10212275298387724_873104722_o
  2. Transfer the granola in a bowl and top with the other half of the banana.

Serves 1 person

Portobello Road Market in London

portobelloOne of my favourite places in London! ❤

It was about a year ago when I visited the city, but I still remember my experience very vividly! ❤ When, I will go back, I will definitely pay my respects to the market, again! :p

If you are travelling to London – first, I am very jealous and second, you have to visit the place! Let me just explain…

It was Saturday morning, when me and my friends decided to go to the Portobello Road Market!

We used to the Tube to get there! I am pretty sure, we started from Lancaster Gate and we stopped at the Notting Hill Gate – which is the closest you can get to the market using the Tube; it’s a 10 minute-walk or so from the station to the market!

The day was not very good, as you can tell from the only picture I have… It was raining, as per uze!!! London, baby! :p

The market….

From the moment, I arrived I could really get the nice vibes – the vibrant, the colourful and the joy was all over the place! This was what really attracted me!

It was like a nicely-done puzzle, where everything was falling into the right place, everything was located at the correct corner and spot!

You could find all sorts of things there… antique shops, fashion markets, second hand corners, fruits and vegetables spots, food stations-for a quick snack, restaurants – for the hungry ones and coffee shops!

For the record, I ended up buying two posters from there… the Chat Noir poster (you know, the one with the black cat) and a poster saying “LIFE IS BEAUTIFUL!”

I am clearly very excited to be there… and to eat! I am waiting for my nocchi! xixixi :p

Cozy Living Room | Christmas Decoration

One day before Christmas, I decided it is about time to show you how we decorated our living room for the holidays.

img_20161217_1930441. First things first, “The Tree”! I decorated the tree with a lot of white and red ornaments! I went overboard this year, but that is fine! I am in love with the fabric ornaments and the baking – themed ornaments! I also have candy cane and my DIY cookie cutter ornaments, hanging from the tree!

 

 

 

2. Sofa and couch decorations! I bought a red drape for the medium couch – is it called medium?! – and pillows for the sofa and the largest couch!

3. The coffee table! I decided to put this white wreath and candle in the middle of the coffee table! On the side, I have the Christmas-themed coffee mats and a candle plate, for my candle obsession! I did not take the picture, doou! 😛

4. Shelves! On the shelves above and around the TV, I have the candy Snowman container for the chocolates, lots of candle holders and the golden-red tree with the wreath!
